Hello friends, today we will make Potli Samosa which is a special dish, as much as this dish looks good, it tastes good to eat.
- maida 2 cups
- Salt to taste
- Oregano tsp (hand crushed)
- Ghee 3 tbsp
- Water as needed (about 1/2 cup + 1 Tbsp)
- For Potato Mixture:-
- Coriander Seeds 1 tbsp
- cumin 2 tsp
- Fennel 1 tbsp
- Ghee 2 tbsp
- Ginger chili paste 1 tbsp
- Green peas 1/3 cup (boiled)
- 7-8 medium sized potatoes (boiled and chopped)
- salt to taste
- Black pepper powder 1 tsp
- Dried mango powder 1 tsp
- Kasoori Fenugreek 1 tsp
- small handful of fresh coriander
Easy to make Potli Samosa
Step 1– To knead the dough, take a big bowl and add flour, salt, carom seeds and ghee in it.
Step 2 – Mix all the ingredients well with your hands and start rubbing the flour in between your hands, this will ensure that your potli samosas will turn out very crispy.
Step 3 – To check whether your dough is ready or not, press a handful of dough in your hand, when the pressure is released, the flour comes well in its shape.
Step 4 – Add water gradually as required to make a medium soft dough, once all the dough comes together, transfer the dough to the kitchen platform and knead it well for 5-6 minutes.
Step 5 – After kneading the dough properly, the surface of the dough will become smooth and not sticky, at this stage cover the dough with a damp cloth and keep it for at least half an hour.
Step 6 – To make potato mixture, first you have to make coarsely ground spices, for this take a mortar pestle and add all the whole spices and grind them coarsely. If you do not have a mortar and pestle, you can also do this in a mixer grinder but make sure that you do not make a fine powder of the spices.
Step 7 – Now to make potato mixture, set a pan on high flame and let it heat well then add ghee, let the ghee heat up well, then mix the spices, ginger chili paste and boiled Add the cooked green peas, stir well and cook for a minute. The peas are already cooked, all you have to do is fry the spices.
Step 8 – Add chopped boiled potatoes and rest of the ingredients to the pan, mix well with a spoon and cook on a medium flame. While mixing, keep stirring the mixture lightly with a spoon.
Step 9 – Spread the mixture on the pan and let it cook on medium flame from one side, the mixture should stick to the pan, this step is very important as it tastes really well, once it turns light brown, Then turn the mixture over and cook the spatula on the other side in the same way, repeat this process 2-3 times.
Step 10- Check the salt at this stage and adjust accordingly.
Step 11 – Your potato mixture for Potli Samosa is ready.
Step 12 – Once the potato mixture is ready and the dough is comfortable, take the dough and divide it into equal sized dough balls.
Step 13 – With the help of a rolling pin, roll the dough into thin chapatis, then cut the edges of the chapati with a knife to give a rectangular shape, now cut the big rectangle into small 4-inch square pieces.
Step 14– Take a square samosa sheet, place a small spoon of potato mixture on it, apply water on the edges of the sheet and then lift the sheet and place it between your thumb and forefinger, filling to bring the 4 edges together Press it down, pinch and seal the sheet, shape all the sheets in this way and your bundle samosas are ready to fry.
Step 15 – To fry them, heat oil in a large pan on medium heat till it becomes medium hot.
Step 16 – Carefully drop the potli into the hot oil and deep fry it on low flame till it turns golden brown, this process will take about 15-20 minutes.
Step 17 – When the bundle samosas become golden brown and crunchy, take them out from the oil with the help of a spider and keep them in a sieve so that the excess oil gets removed.
Step 18 – Your hot potli samosas are ready, serve with spicy green chutney and sweet chutney.
